Cauliflower Soup

Ingredients

1 flower head
2 tablespoons of olive oil
1 tablespoon of salt
1/4 teaspoon black pepper
1 teaspoon cumin
3 tablespoons of butter
  2 onions
  3 garlic cloves
1/4 cup flour
3 cups of milk
2 cup broth
1/2 cup cream
1 tablespoon of parsley
Method

1. Preheat the oven to 400 degrees.
2. Cut the Cauliflower into very small shrubs, spread over it olive oil, salt and pepper, then spread it on the tray so that it is a layer of non-compact over each other.
3. Put it in the oven for about 20 minutes or until it roasts. Leave it to cool a little.
4. In a large pan put the butter and then heat it over medium heat, add the onion and garlic and stir until the onions are wilted, add the flour and stir with the onions for about a minute.
6. Add the milk, stir constantly, until it is firm. Add Cauliflower and a little broth, let it boil, then add more salt and black pepper as needed.
7. Using the hand mixer, grind the soup finely, add more broths according to the required density. (You can also use a blender jug ​​to grind the soup.)
8. Add the cream, let it simmer for a minute.
